Recipe: Chocolate Chip Oatmeal Banana Muffins

I just had a great weekend.  It didn’t involve much of anything except relaxing and hanging out with the boy, but it was awesome.  Lots of laughing.  But also lots of eating and drinking.  I decided I need to prep some food for the week to help me “reset” myself.  And I like to reset with chocolate chips.  So sue me.

I found this recipe and thought it looked decent.  I was curious.  No flour?  No sugar?  Okay, you have me interested.  I wasn’t expecting much, to be honest.  I used my Magic Bullet-type blender to grind the oats and it worked awesome.  The main changes I made to the original recipe were:

-Mixed all of the dry ingredients together and then added them blended wet ingredients.

-Ground the oatmeal in the mixer and then used the other blade to mix the wet ingredients.

-Decreased the honey to 2 tablespoons.

-Added 1 teaspoon cinnamon to the dry ingredients.

-Added one additional diced banana and about 6 ounces chocolate chips to the mixed batter.

-Garnished the muffins with a slice of banana and sprinkle of oats before baking.

I ran the numbers and these have about 150 calories per muffin.  So I did what any sane person would do and pounded five muffins before I could take a breath.  They are all kinds of delicious.  And yummy.

Make these and then eat five in a row so I feel better about myself.
